The Difference Between Baby Back Ribs & Pork Spare Ribs

If your goal is to serve the best BBQ at the Lake of the Ozarks, then ribs are a must-have menu item. So, of course, ribs have a place in the Wobbly Boots Roadhouse lineup of delicious, hickory-smoked meats.

We actually serve two different types of ribs; Baby Back Ribs and Classic Pork Spare Ribs. Pork ribs are classified by many different names. For those of you that are unfamiliar with the differences, today's blog should clear it up for you.

Baby Back Ribs
The name of this delicious dish does not come from the age of the animal, but rather the smaller size of the ribs compared to classic spare ribs. They are also the tenderest and leanest ribs you can order with meat both between and on top of the bones. These are taken from the top of the rib cage between the spine and spare ribs, below the loin muscle.

Baby back ribs are sometimes referred to as back ribs, loin ribs, or Canadian ribs. The latter is due to the fact that Canadian bacon comes from the same loin meat that is connected to these ribs. Generally, baby back ribs have between 10-13 curved bones that are 3-6 inches long.

Here at Wobby Boots BBQ, our Baby Back Ribs Dinner can be ordered as either a full or half-slab of tender, meaty ribs. First, they are coated in our special dry rub. After that, we slow-smoke them, lightly grill them, and baste the ribs with our secret recipe sauce before putting them on a plate next to Texas toast and your favorite side dish.

Pork Spare Ribs
Spare ribs are flatter than baby back ribs and tend to have less meat, but since they are also a fattier cut, that often causes them to be one of the most flavorful cuts. They are taken from the belly side of the rib cage, below the section of back ribs and above the breast bone.

Our Classic Pork Spare Ribs Dinner at the Boot is an experience that true BBQ lovers thoroughly enjoy. Available as either a full or half-slab serving, our special dry rub is used to coat the juicy ribs and then they are slow-roasted over hickory logs until they reach the perfect degree of mouthwatering goodness! A big ol' slice of Texas toast and one of our homestyle side dishes complete the dining experience.

Rib Combos
Ordering the best hickory-smoked BBQ ribs at the Lake of the Ozarks as your main course is one way to enjoy them. We also offer them in a few different combination meals so you can get your rib-fix and still try some of our other dishes at the same time. These include:

  • BBQ Chicken & Ribs Combo
A delicious combination of mouthwatering 'que! Half a BBQ chicken and a half-slab of pork spare ribs served with Texas toast and one side dish.
  • Ribbies & Wings
Two of our most popular menu items on the same plate! 4 Wobbly Wings and 4 individual pork spare ribs.
  • The Wobbly Boots Sampler
Some of the best of what we have to offer! 4 Wobbly Wings, 4 Onion Rings, 4 Bacon Wrapped Shrimp, and 4 Spare Ribs.

So which type of rib do you want to try first? If you want to try them both the next time you're at Wobbly Boots Roadhouse in Osage Beach, better bring a friend. That way you can share both dinners because if you order all of that for yourself, you're definitely going to need a doggy bag!

You could also simply come in to dine at our Lake of the Ozarks BBQ restaurant more than once to try a different rib at two different meals. Either way you decide to do it, we're willing to bet you'll be back a LOT once you get a taste for our BBQ!
