Wobbly Boots Roadhouse's unique style was inspired by the BBQ meccas of the United States: Kansas City, St. Louis, Memphis, Texas, and the deep south. Here is a little background on each of these.
Kansas City
A variety of different woods are used for Kansas City style BBQ, but for them it's all about the sauce. Most from this region are tomato-based and can be found sweet, spicy, or tangy. Typically the sauces are a bit of all three combined. The pit of Henry Perry is credited with creating the KC style back in the early 1900's.St. Louis
There seems to be a little more grilling than cooking with smoke and indirect heat going on with most St. Louis style BBQ. The sauces lean toward being very sweet, slightly acidic, and sticky tomato-based. St. Louis loves BBQ sauce so much, they are said to consume more of it per capita than any other city in the nation.Memphis
Slow cooking in a pit is the way they love to do it in Memphis. They serve up a lot of pork, usually ribs and shoulders. BBQ is served both "dry" (without sauce) or "wet" (with sauce) here. Their "wet" ribs get sauced before cooking, during, and again after.Texas
East Texas slow cooks their beef to the point that it is "falling off the bone." Hickory wood is most often used for smoking meats here. The marinades tend to be sweet and tomato-based, and their sauces are usually on the thick side.Osage Beach
