Hickory-Smoked Meats - Why Our BBQ is So Darn Good!

Smoking meats is described as "the process of flavoring, cooking, or preserving food by exposing it to smoke from burning or smoldering material, most often wood." Your favorite BBQ restaurant at the Lake of the Ozarks has perfected our smoking process, allowing us to serve you the tenderest, juiciest, most flavorful meats in the lake area. 



It's a long, slow process, and anyone that has dined at Wobbly Boots Roadhouse realizes it is totally worth the wait. Of course, you don't have to wait long when you visit our Lake of the Ozarks restaurant, because we smoke enough meat daily to feed everyone that comes in. We will always have hot and delicious food out to your table soon after you place your order. 


Slow-smoking process

For the fall-off-the-bone smoked meats we serve daily, it all starts with our incredible dry rub. We generously coat the meat of choice with our secret-recipe rub before taking it to the smoker.  

While grilling is the act of cooking food directly over a fire, smoking is actually done by cooking the food next to, not over, the flame with low heat. This brings out the maximum flavor and tenderness. What is technically happening is that the smoking process turns the collagen in the meat to a gelatin, and this is what causes it to be so very tender.   



It's gotta be hickory!

A variety of different woods can be used to bring different flavors to meat. Our preferred wood is hickory. It has a rich and full-bodied flavor that complements everything that we serve. Hickory has a very strong flavor that can be overwhelming for beginning smokers, but not us! We are pros at this, and our cooks know exactly how low and slow to smoke our meats so that they come out perfectly every time. 

If you are a sauce person, your smoked meats will then be coated in our mouthwatering house-made BBQ sauce, raising that perfect smoky flavor to the next level. Here at Wobbly Boots Roadhouse, you have a huge variety of delicious smoked meats to choose from:

Seven days a week, beginning at 11 am, all you have to do is head on over and pull up a chair.
